Bluebird & Cherry Blossom Buttercream Wedding Cake


We delivered this bluebird & cherry blossom buttercream wedding cake to the stunning Desmond Tutu Center in NYC this past Saturday (seriously, if you are looking for a unique & gorgeous gothic venue in NYC – check it out!). The cake design was inspired by the couple’s wedding invitation & wedding website, both of which were nature inspired and incorporated bird silhouettes.

The cake flavor was very spring: lemon cake, filled with lemon curd, and frosted in lemon italian moussaline buttercream.  The decor was a created out of a combination of modeling chocolate &  gum paste.

Here’s a detail shot of one of my favorite parts of this cake – the little branch pergola topper with gum paste cherry blossoms and a hanging heart pendant.


As with many wedding cake deliveries, we brought the cake up to the venue sans decoration and then came back with the decor to finish up the cake after we parked the car.  To our shock, when we came back with the decorations we found a man standing in front of the cake & when we asked him to move, we saw blue blossoms from the centerpieces all over the cake!  Luckily, the buttercream was still chilled enough and the florist’s flowers did not have stems, so they were easily removed without much damage ~ but I have now learned to never leave a cake unguarded before it’s finished!  Now why a florist with NO INSTRUCTION to put any flowers anywhere near the cake felt the need to step in and decorate the cake I will never have any idea.  I just hope that once we left the decorated cake he stayed away from it!

Cake Photo Shoot

I know I promised that I wouldn’t let the Sweet Element blog slide for long periods, but somehow, even without a corporate gig anymore – life is still hectic!  In between dealing with all the people necessary to get my cake studio completed (which seriously is a job all unto itself), I’ve been keeping my creativity flowing by making portfolio cakes, which is always gratifying as it allows me to experiment with different techniques and continue to push the envelope artistically.

Yesterday, I was lucky enough to be able to work with Mike from Arclight Images & got some great new shots of some of my latest portfolio pieces.  It was such a pleasure working with a guy with such a great eye & very creative mind.  After a number of shoots with magazines & their very simple backdrops for cakes, it was really fun to think of different settings for pieces – both in & outdoors!
